This Cabernet Sauvignon is sourced primarily from Montes' Finca Apalta Estate vineyard with some additions from their Marchigüe Estate vineyard. These two unique vineyards feature granite-rich soils in differing degrees of decomposition. Both have considerable variation in the clay content, depth, and organic matter from the influence of erosion and deposits from local rivers over time. The soils are generally deep in the flat areas and thinner at the foot of the mountains and at higher elevations. Cabernet Sauvignon is planted on flat or slightly sloping ground where the soil is deeper and has a moderate capacity for moisture retention.

Harvest Note
Overall, the season was favorable for wine production. There was no winter frost at the Marchigüe and Apalta vineyards, and spring provided enough rainfall to maintain vine health through harvest. Bud break and fruit set were normal, though the final bunches harvested were slightly lighter than the previous season’s. Summer remained dry, with only a few days of high temperatures during veraison. Harvest began earlier than the previous year, particularly for Cabernet Sauvignon at Marchigüe. However, the pace slowed in March as cooler afternoons and evenings regulated ripening, and harvest concluded around the same time as in 2021. The wide range of temperatures between day and night ensured that harvesting began at the ideal time, yielding grapes with excellent potential.
Tasting Note
The wine displays a vibrant carmine-red color. Its intense aromas are elegant, featuring ripe red fruits like strawberry and cherry, along with cassis and a distinctive hint of fresh tobacco. Barrel aging imparts balanced toasted notes, complemented by aromas of caramel, dulce de leche, and nuts such as hazelnut and peanut. On the palate, the wine is smooth and balanced, with great body and a lasting finish, with flavors that harmonize beautifully with the aromas.
Food Pairing
Highly recommended with red meats, Mongolian beef, spaghetti with Bolognese sauce, or lambchops with Cabernet and mushroom sauce.
